Simple “Leftover Chicken” Salad

But I am le tired…

I had cold chicken leftovers that were too thick and tough to use in a sandwich and too over-cooked to heat up. So what do I do with them? Chicken salad? Something like that.

Simple Chicken, Tomato and Cranberry Salad

Like a boss.

Light and filling, healthy and sweet. What more could you ask for?

Ingredients

  • chicken, cold and cooked
  • beefy tomato, half
  • mayonnaise
  • dried cranberries
  • celery (very optional)

I took a machete, I mean large knife, and cut my chicken into cubes. No really, you guys, my roommate’s knife is so big it looks like a machete. All I need is some red tape, a short skirt, and a long jacket, and I’d be someone’s dream girl. This knife is just enormous!

Anyway, after the chicken has been hacked up into small pieces, cube half of a large tomato and add it to the mix. Now add a little mayonnaise and throw in some dried cranberries. Voila! Your chicken salad is ready and perfect. If you like celery, I bet some chopped up celery would complement it very well.
